Tomato….Tamato…..Tagine……Tajine……

Whichever way you prefer to spell it, Tagine along with couscous, has to be one of the dishes most synonymous with Moroccan cuisine. In Morocco it is mostly spelt tagine. Couscous is traditionally prepared on Fridays, whilst tagine is eaten pretty much on a daily basis. Tagine refers both to the pottery dish with a [...]

Red Pepper and Chickpea Hummus

I was reading Jeanne’s post on some very delicious looking Chickpea and Paprika Crostini over at Cooksister.com and after hopelessly failing the chickpea quiz decided I should stick to the preparation of them instead!!! I love chickpeas and always keep a packet ready to use in my freezer. So combined with some leftover roasted red [...]

Tuna and Bean Salad

I was taught this version of an old recipe many years ago by a very special English lady who was the then partner of the owner of the game lodge I cooked for. She always made it sound so exotic…apparently similar to that made by the sailors as it can almost completely be made from [...]

Mushroom Risotto….

Couscous Friday….

Couscous Friday….

When we first moved to Morocco I one day asked Maria to please show me how to cook some “traditional” couscous for dinner. It was about 16h30 and a normal weekday. The response I got was quite astounding and not something I could understand at the time, a cross between “are you mad”, “it is Thursday” and “how could you possibly cook couscous in just an hour and have it for dinner to top it all?”… Needless to say we did not have couscous for dinner!
