I received a recipe for a sweet potato salad with spring onions and lemon from my MIL a few months back but never got around to making it! When we were in SA we had it with dinner one night and it was absolutely delicious. Sweet potatoes are great foods, low GI and full of nutritional value.
This is my version of a similar dish…
1 kg sweet potatoes
Boiled until soft, left to cool, peeled and sliced into thick slices
1 red onion, thinly sliced
For the dressing: Combine all ingredients below
125ml freshly squeezed orange juice
Grated zest of one orange
50ml olive oil
2 Tbs sherry vinegar
1 tsp crushed garlic
1 tsp mashed fresh ginger
½ cup chopped fresh coriander
1 Tbs clear honey
Salt and pepper to taste
Mix the sweet potatoes with the onion, pour over dressing and leave for a few hours for the flavours to seep into the potatoes.
Delicious with a barbecue!!!
