A healthy start to the week……

I am not a cereal lover, but as I am trying to cut wheat out of my diet I have to come up with an alternative to my usual slice of whole wheat toast! Muesli seems to be a good option, but often shop bought cereals are laden with hidden sugars, fats and preservatives. They are also really pricey here in Morocco.
A simple solution, make your own. Very easy and far healthier.
The basis consists of
1 kg rolled oats drizzled with a bit of olive oil and honey.
Roast, thinly layered on an oven tray for about 2 hours at 70°Celcius. I used a spatula to mix it all up every half an hour.
You can add any amount of ingredients to this basic mixture. Be careful of too many nuts and seeds which are rich in oils if you are trying to cut back on fats.
At the beginning of the cooking time I added:
1 cup raw almonds
1 tsp cinnamon
About 30 minutes before the end I added:
1 cup mixed seeds linseed, sesame, pumpkin seeds
1 cup dried cranberries
½ cup chopped dried figs
Leave to cool and store in an airtight container.

Sounds devine – I dont have the patience you have when it comes to food…I usually buy the Kellogs flakes for breakfast…doing Weight Watchers and its only 1 point for 35g’s – so find this works for me..
Think you should invite me around for breakfast!!!!
