Aubergines with honey…or in Spanish… berenjenas con miel
I had this dish twice in Spain during our stay, the first time in a restaurant in Alhaurin el Grande and the second time in Casarabonela. It certainly was not a combination of two ingredients that I would put together, so I had to try it. It was surprisingly pleasant to eat, a combination of sweet and savoury and left my palate a bit unsure as to wether it was a vegetable or a dessert! The honey was rich, dark and almost syrupy!

It reminded me very much of the Moroccans love of sweet with savoury.

I would serve it as part of a tapas or a snack platter.
