Red Pepper and Chickpea Hummus

I was reading Jeanne’s post on some very delicious looking Chickpea and Paprika Crostini over at Cooksister.com and after hopelessly failing the chickpea quiz decided I should stick to the preparation of them instead!!!

I love chickpeas and always keep a packet ready to use in my freezer. So combined with some leftover roasted red and yellow peppers I made this

Red Pepper and Chickpea Hummus…

I love Hummus as it is healthy, low GI, loaded with vitamins and good with so many things: on sandwiches as an alternative to butter or margarine, Dip – for vegetables and crisps, part of a Mezze platter, on pitas etc….

This is so easy to make and you could really add any amount of ingredients to suit your palate, tahini, chilli, sundried tomatoes, the list is endless!

2 cups chickpeas, soaked and boiled in some chicken stock

1 cup, roasted and marinated peppers

2 cloves garlic, crushed

1 Tbs Olive Oil

Salt and pepper to taste

Put all the ingredients in a blender for a few minutes until smooth or in a bowl and blend with a hand blender.
