Fennel……

For some reason I find myself buying fennel most weeks, with all good intentions of trying new and exciting recipes with it, but alas, I always seem to find it lurking at the back of the fridge a few weeks later! It is a great vegetable, which certainly, in our house, doesn’t get used as often as I would like to!

It goes very well with roast meats and fish and can be used raw or cooked.
Oven roasted fennel is delicious and probably my favourite way of preparing fennel.

I used some combined with goat’s cheese to make these little puff pastry snacks. The combination works really well!

Slice some fennel bulbs
Drizzle some olive oil over
Drizzle a little balsamic vinegar
Season with Maldon Sea Salt and ground pepper
Sprinkle some fresh thyme over

Oven roast at 200°C for about 20 minutes.

I used some puff pastry rounds, added some goats cheese, with some sliced up fennel on top and popped them back in the oven at 220°C for about 12-15 minutes.

    I also love fennel, after avoiding it for years because of associations with liquorice which I detest. But now I LOVE it, particularly in risotto or roasted simply like this. Yum!
