Strawberries…..

Now you might remember that gorgeous crate of strawberries that we bought a few weeks back near Asilah…so this is what happened to them (of course there were some losses incurred along the way, too many little mouths and fingers in this house!!)…
First up some wonderfully easy Strawberry Jam….
4 cups crushed strawberries
4 cups white sugar
¼ cup fresh lemon juice
Mix together the strawberries, sugar and lemon juice in a heavy bottomed pot. Stir over a low heat until the sugar is dissolved. Increase the heat and bring to the boil. Keep stirring occasionally. Boil for about 20 minutes until the mixture reaches 105°Celcius or by dropping some onto a chilled saucer and letting it cool. Once cool, push your finger through the jam: if the surface wrinkles, the jam is ready. Pour into sterilized jars and seal.
And after all that work, a little drink with a few more of those delicious strawberries……
Strawberry Daiquiri
250ml juiced strawberries (or pop them in the blender if you don’t have a juicer)
Crushed ice
1 Tbs lime juice
1 tot light rum such as Bacardi
1 tot Cointreau
Mix the lot together in a blender, check for taste and serve. You can make it as alcoholic or alcohol free as you like!
How ridiculously easy that strawberry jam sounds!! I made chutney for the first time last year and managed to sterilize the jars, so I’m feeling a little more confident in my preserving skills. Maybe this will be the year for jam…
