Chicken Liver Tapas…

I spotted these lovely fresh chicken livers today whilst at the shops. I love chicken livers, pate…peri peri..etc…etc… They are also perfect as part of a tapas meal! So here with my…

….. Chicken Liver Tapas…..

1 small onion, sliced
½ red pepper, sliced
1 small green chilli, sliced
3 cloves garlic, finely chopped
1 Tbs Fresh Thyme
1 Tbs Italian parsley, finely chopped
350g chicken livers, cleaned and roughly chopped
2 Tbs Olive Oil
1 cup cherry tomatoes, halved
1 cup Dry Sherry (I used Spanish Fino)
Salt and black pepper to taste

Heat olive oil in a pan. Add onion and thyme and fry for a few minutes.
Add peppers, chilli and garlic and cook until soft. Add the chicken livers and cook for a few minutes, stirring occasionally. Add cherry tomatoes and the sherry and leave to simmer for about 10 minutes.
Season to taste with salt and pepper and serve with ciabatta or melba toast.

    My sister-in-law made something simila recently over Easter and it reminded me just how much I love chicken livers. SO cheap and so versatile. Not to mention delicious!
